I’ve had a few people ask for an oatmeal molasses bread recipe so I thought I’d break this good ‘ol recipe out of my vault of .txt files from about ten years ago. This recipe was one of my first forays into budget cooking. Back in the day, when I had first moved out on…
Ever since the magical experience of the pumpkin pie baked oatmeal, I’ve been experimenting with other flavors and varieties of baked oatmeal. I made this one last week and while it wasn’t quite as mind blowing as the pumpkin, I happily gobbled it up every morning and was a little sad when I at the…
During the hot summer months all I ever want to eat is lemon raspberry slushies. There’s something about that sweet tart flavor that I find ultra refreshing. Lemon raspberry muffins are also pretty tasty, so I thought, “why not put that flavor into oatmeal for summer?” It worked very well! I increased the size of…
Will I ever get tired of baked oatmeal? Probably not. It’s easy, cheap, deceptively filling, and I can cook it one day and then eat it throughout the rest of the week. I love this version because I barely had to add any extra sugar thanks to the super sweet bananas. I used only 1/4…
Hmm… I’m not doing a very good job convincing you that I’m not a chocolate person, am I. Well, this granola is the shiznit, even for a non-chocolate person like myself. Granola uses sugar and oil to bind everything together, so it’s fairly caloric by nature. Because of that, I didn’t need to add any…
Oh, this one is so much fun! (and delicious!) I really wanted to do some sort of peanut butter baked oatmeal, but I couldn’t figure out what to put with it… until I thought about how mashed bananas have made the best baked oatmeals, texture-wise. And then it all just came together. What goes better…
The first thing I saw when I turned on the TV today was a commercial for some sort of breakfast-oat-cookie-thing. I wanted one. So, I made some. Except mine are more like soft oat and nut bars instead of cookies. I have made baked oatmeals, granola, and granola bar-like things before, but this time I wanted to create something…
I was craving some oatmeal raisin cookies the other day when it hit me that pumpkin would probably taste pretty freaking good in an oatmeal cookie. So, I went to buy the ingredients. Then it hit me that I have some leftover dried cranberries in my pantry, so there was no reason to buy raisins…
Oh baked oatmeal, how do I love thee? Let me count the ways… There’s Cranberry Apple, Banana Bread, Lemon Raspberry, Blueberry Banana, and let us not forget Pumpkin Pie Baked Oatmeal. With each flavor I fall deeper in love with your warm, filling, and flavorful breakfast ways. In this version, rich walnuts and warm cinnamon…
I’m always looking for ways to streamline my breakfast routine. While I am the type to get up an hour early just to give myself time to enjoy breakfast, I don’t want to spend any more time than absolutely necessary preparing that breakfast. I want to have as much time as possible to sip my coffee and…
